It's totally normal to have this reaction. The missionary zeal is definitely annoying, but I wouldn't go so far as to call them "nonunderstanders." Most vegans have thought through these issues very carefully, and have done the math. Meat consumption is highly inefficient in terms of land, water, and CO2 emissions per calorie. While the transition can't happen overnight a gradual transition of 2-5% of calories per year moving to plant based sources is absolutely necessary for us to continue to feed the whole world as population increases and arable land and water decrease due to climate change. That's why most vegans advocate the way they do, for better or worse. It's taken me about 8 years to go from standard omnivore to 99% vegan, but it's been a rewarding experience. And it definitely feels like the right thing to do for a solarpunk world.
