I'll reiterate that setting the boundary based on phylogeny is the problem here. What if we perform the research and find that wheat is quantifiably more sentient than a clam? For my criterion, if a person has passed the point where they have any reasonable doubt given the current state of knowledge that it is possible for the species in question to be sentient, then I think they should be able to be considered vegan. As to the second point, the precedent sent to carnists by lumping together clams and cows is harmful to the cause as expressed by your own logic. It is _easy_ to imagine a cow is sentient after spending 5 minutes observing one so the convincing can be carried out just at that level. But asking someone to accept that a sponge is sentient is begging to not be taken seriously. It makes the movement seem like a bit of a purity club, something more akin to religion than a stance on moral philosophy. Which is fine for some to take, I just advocate for veganism from this stance.
